Come discover the tips and tricks of making fabulous soups and stews of your own as Chef Tim shares a trio of his favorites with us: Serious Southwest Chili is a “true blue” chili inspired by a famous TV chef. Chef Tim says, “It is slightly modified for this class but still guaranteed to knock you out! The secret is in the beer ... and it’s not just any beer.” And, speaking of chili, Pasta Fagioli, sometimes know as Italian chili, features beans and pasta and a lot of other things you’re sure to like. Chef Tim has spoken often of the Italian influence in New Orleans cuisine and this particular recipe comes from there. For the finale we’ll learn to make Chicken Sauce Piquant, a Cajun favorite with a little bit of piquant (heat). A roux with a rich tomato base and a couple of closely held secrets and you’ll be all set to go. Don’t miss this one!
